One of the most requested recipes from the kitchen of Muriel Lamppert, my late mother-in-law (one of the best cooks I have ever known)
Cauliflower Bake
1 Large cauliflower
½ tsp salt
3 cups water
Bring to a boil, cover, reduce heat, cook 5 min, drain.
Combine:
½ cup melted butter or margarine
1 T sugar
½ tsp salt
½ tsp pepper
1 cup crushed butter crackers (can be gluten free)
Stir into cauliflower and add the following:
1 ½ cups shredded cheddar cheese – reserve ½ cup for topping
½ cup chopped green pepper
1 med onion chopped
1 28 oz can diced tomatoes (can be seasoned)
Spoon into 9 X 13 in greased baking dish, top with reserve cheese.
Bake at 350 degrees for 25 minutes.
