Ingrédients
2 à 4 steaks d’épaule de porc
Sel casher au goût
Poivre noir très finement moulu au goût
Votre glaçage à l’érable pour barbecue préféré

Équipement
Vos copeaux de bois préférés pour le fumage
Boîtier à copeaux de bois ou tube de fumage en acier inoxydable Napoleonᴹᴰ
Préparation

1. Assaisonner généreusement les steaks d’épaule de porc de sel casher sur toutes les faces. Moudre du poivre à travers un tamis pour ne saupoudrer que les plus fines particules sur le porc afin d’obtenir une saveur de poivre franche sans qu’il brûle. Déposer les steaks sur une grille au-dessus d’une plaque et laisser reposer au moins 40 minutes. Pour un temps de repos plus long, réfrigérer afin d’effectuer un saumurage à sec.

2. Au moment de griller, retirer une des grilles de cuisson et le diffuseur au-dessus d’un brûleur. Installer le boîtier à copeaux de bois en acier inoxydable de Napoleonᴹᴰ et le remplir de copeaux de bois.

3. Allumer deux brûleurs du gril Napoleonᴹᴰ (autres que celui situé sous le boîtier copeaux de bois) et régler à feu moyen-doux. Préchauffer le gril à 325 °F pour une cuisson indirecte.

4. Déposer le porc au-dessus des brûleurs éteints. Éteindre les brûleurs ayant servi au préchauffage et allumer celui situé sous le boîtier à copeaux de bois. Fumer pendant 30 à 40 minutes, en badigeonnant légèrement de glaçage à l’érable, jusqu’à ce que la température interne atteigne de 145 à 150 °F.

5. Retirer le porc et régler à feu vif deux brûleurs côte à côte. Préchauffer le gril à plus de 500 °F ou utiliser le brûleur latéral infrarouge SIZZLE ZONE.

6. Saisir le porc à chaleur directe, en badigeonnant légèrement d’un peu plus de glaçage à l’érable lors du dernier retournement.

7. Servir avec des légumes de saison et le féculent de votre choix.

Ingredients

2 to 4 pork butt steaks
Kosher salt to taste
Very finely ground black pepper to taste
Your favourite BBQ maple glaze

Equipment

Your favourite wood chips for smoking
Napoleon Stainless Steel Smoker Box or Pipe

Method

1. Season pork butt steaks generously with kosher salt on all sides. Grind pepper through a mesh sieve to dust only the finest particles over the pork for clean pepper flavour without burning. Place steaks on a rack over a tray and rest for at least 40 minutes. If resting longer, refrigerate to dry brine.
2. When ready to grill, remove a set of cooking grids and the sear plate over one burner. Install the Napoleon Stainless Steel Smoker Box and fill with wood chips.
3. Ignite two burners on your Napoleon grill (not the one under the smoker box) and set to medium-low. Preheat the grill to 325°F for indirect cooking.
4. Place pork over unlit burners. Turn off the preheated burners and ignite the burner under the smoker box. Smoke for 30-40 minutes, brushing lightly with the maple glaze, until the internal temp reaches 145–150°F.
5. Remove pork and heat two side-by-side burners to high. Preheat the grill to 500°F+ or use the Infrared SIZZLE ZONE Side Burner.
6. Sear pork over direct heat, brushing lightly with more maple glaze on the final flip.
7. Serve with seasonal vegetables and your favourite starch.
