“It’s just knife sharpening, right?” Well, see for yourself how this poor Takamura ended up in the hands of an amateur sharpener. It had a commercial grade hollow grind that nearly destroyed it! I ground away that hollow grind without losing any blade height and brought back the original edge geometry. It’s as good as new. BE CAREFUL WHERE YOU BRING YOUR SWEET KNIVES. Drop off or mail in to us anytime at or

Before and after a wee bit of thinning out this Takeda Santoku. The customer had done a great job of thinning on stones but needed me to clean it up just a bit for that optimal edge geometry. Final edge on stones to 4K. Insane Takeda blue super sharpness. Mail in or drop off at or

Major refurb for this DOA Moritaka gyuto. This knife was banged up and getting the edge back took some hammering while grinding. Super happy keeping the grind crisp and thin. Good as new. NGL y’all have no idea how hard this is. Drop off or mail in to our or locations.

Before and after thinning out this Takeda AS Nakiri. Always a tough decision whether to keep the scandi or convert it, but one of my main considerations is to make it easy for the customer to maintain. Now the edge geometry is improved and they can just lightly strop the primary edge to keep it in tip top shape. Remember the soul of the knife is in the heat treat, not the grind. Check out our YouTube page to explain my thought process behind the decision. Mail in service welcome or drop off anytime at our or locations.

Full thinning job for this insane Nigara SG2 Kiritsuke. The customer originally wanted me to etch it dark after grinding, but with that gorgeous handle I thought a more polished blade would look better. He agreed after seeing it. What do y’all think? PER CUSTOMER REQUEST, I tuned this new in box Fujiwara to improve edge geometry and the contrast between the cladding and core steel. He heard I could do this so he wanted to see for himself. Very pleased with the results, to say the least. This takes precise freehand grinding and an eye for the wabi sabi. If you want your blades to look like this, drop off anytime or or mail in anytime. Quick turnarounds as always.
